What are Microgreens?

mGreens are vegetable seedlings that are bigger than sprouts and smaller than baby greens. They are harvested one or two weeks after planting. When added to foods, salads, or smoothies, they add additional nutrition, texture, and flavor (sweetness or spiciness).

Benefits

What are the health benefits from eating microgreens?

mGreens are a superfood high in essential vitamins, minerals, proteins, and antioxidants in amounts up to 40 times more than the mature leaves of the plants.

Vitamin K helps maintain healthy blood pressure. Vitamin C (antioxidant) protects your cells from sun damage. Vitamin E is important for healthy vision, reproduction, brain cells, and skin. Lutein sharpens vision. Beta-carotene converts to vitamin A for good eye vision, a strong immune system, and healthy skin.

Calcium supports strong bones. Potassium regulates fluid inside our cells and improves muscle contraction, nerve signals, and regulates heartbeat. Iron is needed for healthy red blood cells. Zinc boosts the immune system. Magnesium is critical in muscle and nerve function and energy production. Copper helps produce red blood cells and collagen for bone and connective tissue.

Antioxidant and anti-inflamatory properties in microgreens help prevent cell damage that leads to alzheimer's, heart disease, certain cancers, and diabetes.
